Preserving Figs

Earlier this month we were given a huge box of perfectly ripe Spanish figs by a very generous friend. We ate lots on arrival then began preserving them in lots of different ways.

We dried some, steeped some in alcohol to make fig liqueur, then we squeezed some into jars and pickled them with a sticky honey spiked syrup. None were wasted and we will now be enjoying figs all year round at Hill Food Co HQ.
